Carrot Ring Recipes
I checked out my Settlement Cookbook and could not find a Carrot Ring recipe, but then pulled down one of the temple cookbooks and found quite a few…however none of them are really Pesach fare, as they all have levening, flour and bread crumbs.
Here are a couple:
Bubbe’s Carrot Ring
1.5 to 2 cups grated carrots
1 scant cup of shortening
.5 cup brown sugar
1 egg
rind and juice of half a lemon or orange
1.33 cups flour
1 tea baking powder
.5 tea salt
.5 tea baking soda
Mix all ingredients together well. Grease and flour a ring mold. Bake at 350F for 1 hour. Serve hot, fill center with steamed green vegetables.
Laka’s Carrot Ring
.5 lb butter
.5 cup dark brown sugar
1 egg
1 T water
2 cups grated raw carrot
1.5 cups flour
.5 tea baking soda
.5 tea baking powder
.5 tea salt
.5 tea cinnamon
Cream butter and sugar. Add well beaten egg, water and grated carrots. Sift flour with spices and add to carrot mix a little in at a time. Pour into a greased 9″ ring mold. Bake for 40-50 minutesat 350F. Fill center with favorite vegetables.
I do not know how to adapt regular recipes to Passover friendly recipes, but maybe someone else out there can?
